How often should I flash new firmwares though? Once a month?
personally, besides wanting to test, I would say once a year is plenty.
I am still using r46640 (from May 13th 2021) on my Linksys WRT54GS v1.1. there might have been a little security issue since then, but probably nothing I would be heavily concerned with, especially since where I am at there is a good chance no one is within distance to connect to it. so even if there was some level of security issues in the wireless, it's unlikely anyone would exploit it right from the get go. so while I am sure some security issues are found here and there, the question is, how many are actually being exploited? ; probably very few to none in general. hence, chances are you are safe if you update from time-to-time. I would say short of any major security flaws, which tend to be rare, no one is going to be hacking your DD-WRT router anytime soon.
so I guess main thing is don't run a firmware TOO outdated on the side of caution and playing the odds you will be fine.

You should be using 12-31-2022-r51140 at a minimum, if not 12-18-2023-r54545; not just from a security and vulnerability standpoint, but stability, especially in regards to the webUI.
